Broth with custard - Russian Soup Recipe

How to Cook & Prepare Broth with custard:

Prepare 1 ½ litres broth.
Custard
½ cupful milk Parsley leaves
1 tblsp butter (optional)
4 eggs 150 g spinach or 15 g
Salt tomato paste
(optional)

Break the eggs into a mixing bowl and beat well with a whisk. Add salt. Beating continuously, gradually add the cold milk or broth. Strain into well-oiled custard cups or one large mould, cover and steam in a hot water bath until the custard sets, (10 to 15 minutes for custard cups and 30 to 40 minutes for a large mould). Keep the water in the bath close to boiling point. Cool slightly (10 15 minutes) and unmould. If the custard is made in a large mould, cut into squares after unmoulding. Serve the broth with a piece of custard in each plate.
Before serving, parsley leaves may be added to the broth.
