Broth with custard - Russian Soup RecipeHow to Cook & Prepare Broth with custard: Break the eggs into a mixing bowl and beat well with a whisk. Add salt.
Beating continuously, gradually add the cold milk or broth. Strain into
well-oiled custard cups or one large mould, cover and steam in a hot water
bath until the custard sets, (10 to 15 minutes for custard cups and 30
to 40 minutes for a large mould). Keep the water in the bath close to
boiling point. Cool slightly (10 15 minutes) and unmould. If the custard
is made in a large mould, cut into squares after unmoulding. Serve the
