Cauliflower Soup - Russian Soup Recipe

How to Cook & Prepare Cauliflower Soup:

800 g cauliflower 1 ½ -2 tblsps rice
1 carrot (optional)
1 stalk of celery 1 or 2 parsley roots
1 ½ litres meat stock salt

Wash and cut or break up the flower clusters, scrape and slice the carrot. Add to strained meat stock. Add the celery. Salt to taste. If desired, add rice. Cook for 20 to 30 minutes. Remove the celery a few minutes before the soup is done. Serve with pirozhki or pirogi with meat filling.
