Chanterelle Mushroom Soup - Russian Soup Recipe

How to Cook & Prepare Chanterelle Mushroom Soup:

500 g chanterelle 3 litres water
mushrooms 1 tsp flour
100 g salt pork 2 tblsps sour cream
1 onion Salt, pepper

Dice and render the salt pork and sauté sliced onion for 10 minutes. Wash mushrooms and add to the onion; sauté another 45 minutes. Add water and salt. Simmer for 30 minutes. Blend flour and sour cream and thicken the soup. Add pepper and salt to taste.
