Cherry soup with poached dumplings - Russian Soup Recipe

How to Cook & Prepare Cherry soup with poached dumplings:

(Vareniki)

600 g cherries salt
1 cupful flour ½ cupful sugar
2 eggs

Divide the cherries. Stone one half and crush the other. Boil the cherry pits, sugar and crushed cherries in 4 or 5 cupsful of hot water and then strain. Make a dough as directed in the recipe for pelmeni (see p. 44). Roll out thin and cut rounds. Put 1 or 2 stoned cherries on each round ad fold over into a half moon. Pinch the edges. Cook the vareniki for 5 to 10 minutes in the hot cherry stock and serve at once.
