Clear Beet Soup - Russian Soup Recipe

How to Cook & Prepare Clear Beet Soup:

(Borshchok)
1 ½ litres stock 2 or 3 tblsps grape
500 g beets vinegar
1 tblsp sugar

Make a clear meat, chicken or wildfowl broth. Add thinly sliced beets, grape vinegar and sugar. Cook for 10 to 15 minutes. Strain and serve in bouillon cups. Pass croutons and cheese.
