Crabmeat Cream Soup - Russian Soup RecipeHow to Cook & Prepare Crabmeat Cream Soup: 1 can crabmeat 4 cupsful milk Reserve several large pieces of crabmeat for garnishing. Pass the rest through a mincer. Put the crabmeat and one cupful of stock or water in a saucepan. Simmer for 5 to 10 minutes. In a separate saucepan blend the flour with 2 tablespoonsful of butter and stir in hot milk. Bring to the boil. Add the crabmeat and simmer for 15-20 minutes, then rub through a sieve. Add salt to taste and butter. Beat the egg yolks and combine with the cream which has been heated (do not boil) in a heavy saucepan. Stir this mixture into the soup.
