Cranberry and Apple Soup - Russian Soup RecipeHow to Cook & Prepare Cranberry and Apple Soup: Pick, wash and crush the berries in an enameled saucepan. Squeeze out the juice. Pour 5 cupsful of boiling water over the skins, stir, cover with a lid and let stand for 10-15 minutes. After this strain the liquor through a cheeselcloth; add the sugar, pared and sliced apples and bring to the boil. Pour in the potato flour which has been mixed with 5 tablespoonsful of water and boil for 2-3 minutes. Cool to 60*C, (140*F) and carefully stir in the cranberry juice.
