Cream of Pea Soup - Russian Soup RecipeHow to Cook & Prepare Cream of Pea Soup: Rub the canned or cooked fresh frozen peas through a sieve and stir in milk sauce made as follows. Blend the flour and 2 tablespoonsful of butter and stir in hot milk. Simmer for 10 to 15 minutes, strain and add hot water. Salt to taste and add egg yolks blended with cream or milk and heated to 70*C (160*F) in the top part of a double boiler. Before serving add a tablespoonful of butter and garnish with 2 or 3 tablespoonsful of whole peas. Serve croutons separately. [an error occurred while processing this directive]
