Cream of Potato Soup - Russian Soup Recipe

How to Cook & Prepare Cream of Potato Soup:

1 kg potatoes Garnishing: 2 egg
2 to 3 cupsful milk volks ¾ cupful
3 tblsps butter milk
3 leeks salt

Clean, wash and cut up the leeks; brown slightly in butter, then add washed pared and sliced potatoes. Salt and boil in 5 cupsful of water for 25 to 30 minutes. Sift the potatoes and stock through a strainer, stir in hot milk. Before serving garnish with butter or thicken with egg yolks and milk that have been blended in a separate bowl. Pass croutons.
