Cream of Pumpkin Soup - Russian Soup Recipe

How to Cook & Prepare Cream of Pumpkin Soup:

800 g pumpkin 4 or 5 cupsful milk
150 g croutons or 3 tblsps butter
2 tblsps flour 2 tsps sugar
300 g potatoes salt

Pare, wash and slice the pumpkin and potatoes. Cook in 3 or 4 cupsful of water. Add salt, sugar and a tablespoonful of butter. Simmer for 25 to 30 minutes. ADD croutouns (fried in butter or toasted), stir and bring to the boil. Sift and rub through a sieve. Add hot milk until it is the thickness of cream. Top with butter.
This soup may also be made as follows; Cut up the pumpkin and cook in 2 cupsful of water. In a separate saucepan blend 2 tblsps flour and 2 tblsps butter, brown slightly then sitr in 4 cupsful of milk and 2 cupsful of water. Bring to the boil and combine with the pumpkin. Cook for 15 to 20 minutes. Sift the soup and rub through a sieve; add salt to taste. Stir in 1 to 2 cupsful of hot milk and butter. Pass croutons separately.
