Cream of String Bean Soup - Russian Soup Recipe

How to Cook & Prepare Cream of String Bean Soup :

600 to 700 fresh or 2 cupsful milk
canned string beans salt
3 tblsps butter croutons
500 g potatoes

Wash the fresh string beans and remove the strings. Cut about a quarter of them into diamonds. Put the rest through the food chopper. Pare, wash and cut the potatoes. Add the minced string beans, salt, 1 or 2 tablespoonsful butter, and 4 or 5 cupsful of hot water. Cook covered. When the potatoes are tender, sift through a sieve. Blend the puree with hot milk; add the butter. Garnish with the cut string beans which have been cooked separately. Pass croutons.
If canned string beans are used, reserve part of them for garnishing, add the remaineder (including juice) to the potatoes and continue as directed above.
