Cream of String Bean Soup - Russian Soup RecipeHow to Cook & Prepare Cream of String Bean Soup : 600 to 700 fresh or 2 cupsful milk Wash the fresh string beans and remove the strings. Cut about a quarter
of them into diamonds. Put the rest through the food chopper. Pare, wash
and cut the potatoes. Add the minced string beans, salt, 1 or 2 tablespoonsful
butter, and 4 or 5 cupsful of hot water. Cook covered. When the potatoes
are tender, sift through a sieve. Blend the puree with hot milk; add the
butter. Garnish with the cut string beans which have been cooked separately.
Pass croutons.
