Dried Bean Soup - Russian Soup Recipe

How to Cook & Prepare Dried Bean Soup:

½ cupful dried beans 2 tblsps butter
1 carrot Salt, pepper, bay leaf
1 parsley Minced parsley or dill
1 onion Sour cream
1 tblsp tomato puree

Soak the beans in cold water for 4-5 hours. Cook for 20 to 30 minutes. Add first the vegetables, which have been finely diced and sautéed in butter, and then tomato puree. Add a bay leaf; salt and pepper to taste. Cook until beans are tender.

Before serving sprinkle with minced parsley or dill. Top each plate with a spoonful of sour cream
