Fish Cream Soup - Russian Soup RecipeHow to Cook & Prepare Fish Cream Soup: Clean, wash and fillet the fish. Make a fish stock with the bones, vegetable
roots and one onion. In a separate saucepan braise the fish which has
been cut into pieces and the onion chopped fine in 2 tablespoonsful of
butter. Blend flour with 2 tablespoonsful of butter and stir in 4 cupsful
of fish stock. Bring to the boil and add the fish. Simmer for 15 to 20
minutes. Strain and rub the ingredients through a sieve. Cool the soup
slightly. Beat the egg yolk and combine with hot milk. Add this mixture
to the soup. Salt to taste. Garnish with butter and pieces of fish or
fish balls. (Reserve 100 g of fish for fish balls.). Pass croutons separately.
