Lettuce Cream Soup - Russian Soup RecipeHow to Cook & Prepare Lettuce Cream Soup: Wash the lettuce leaves and dip into boiling water for 1 or 2 minutes. Drain in a strainer and then put through a fine mincer. In a separate saucepan sauté the flour using 2 tablespoonsful of butter; gradually stir in 5 to 6 cupsful of hot milk. Bring to the boil and blend with the lettuce. Cook for 15 to 20 minutes. Add salt to taste and butter. Stir in another cupful of hot milk or cream. Separately serve croutons.
