Milk Soup with Potato Drop - Russian Soup Recipe

How to Cook & Prepare Milk Soup with Potato Drop:

Dumplings
1 litre milk 3 or 4 tblsps flour
3 or 4 potatoes 1 tblsp butter
2 eggs salt

Boil the potatoes and rub through strainer. Combine with raw egg yolks flour and salt. Fold in egg whites beaten stiff. Drop into the hot milk with a teaspoon that has been dipped in hot water. Cook uncovered over low heat for 10 to 12 minutes. Add salt and butter.

Plain or mannacroup kleetski (see p.44) may be substituted for potato kletslki.
