Mushroom Stock - Russian Soup Recipe

How to Cook & Prepare Mushroom Stock:

50 g dried mushrooms 1 onion
2-3 litres water

Wash the mushrooms in warm water. Clean and cut the onion in half. Add cold water, bring to the boil and simmer for 2-2 ½ hours. To reduce cooking time soak the mushrooms in cold water 1 to 2 hours and cook in the same water until tender. Strain. Rinse the mushrooms in cold water, drain and shred. Add them to the soup made with the stock.
