Noodles Cooked in Broth Russian Soup Recipe

How to Cook & Prepare Noodles Cooked in Broth:

500 g meat 1 onion
150 g noodles or 2 tblsps butter
vermicelli salt, pepper, bay leaf
1 carrot minced dill or parsley
1 parsley root

Prepare a meat or chicken stock. Clean and shred the vegetables and onion. Sauté slightly in butter, Add to the strained stock and bring to the boil. Add the noodles (see below). Add a bay leaf; salt and pepper to taste. Bring to the boil and cook for 15 to 20 minutes. Before serving sprinkle with minced dill or parsley.

Noodles
1 cupful flour 2 tblsps water
1 egg 1/3 tsp salt

Break the egg into a small mixing bowl, beat slightly and add water. Stir in salt. Gradually work in flour to make a heave dough. Turn onto a dough board, knead slightly. Roll into thin sheets 5-6 cm wide. Sprinkle with flour, cover, and let stand for 30 minutes or more to dry. Roll up and cut into thin stirps with a sharp knife.

Yermicelli, shells or stars cooked
in both

Any of these or other similar paste can be used in the above recipe for noodles cooked in broth.

Boil in salt water till half done, drain and then add to the broth.
