Pickled Cucumber Soup with Fish - Russian Soup Recipe

How to Cook & Prepare Pickled Cucumber Soup with Fish:

300 g fish 1 parsley or celery
500 g potatoes root
4 tblsps cereal (rice 2 pickled cucumbers
or pearl barley) (200) g
1 carrot 2 bay leaves
1 onion 5-6 peppercorns
2 tblsps vegetable oil

Peel the cucumbers, remove the seeds and cut into shoestrings. Cook the cucumbers in fish stock.

Saute the sliced onion, carrot and parsley or celery cut into shoestrings. Cut the potatoes into chunks and add them and the sautéed vegetables to the boiling fish stock. Cook for 15 minutes. Add the pickled cucumbers, peppercorns, bay leag and salt and cook for another 5 minutes. Serve sprinkled with minced herbs. Should the rassolnik lack savouriness, and strained and boiled brine.
If desired the rassolnik may be made with pearl barley. The pearl harley should be added to the stock first. Soak the peal barley for 2-3 hours, then drain. Put it in the upper part of a double boiler, cover with boiling water and steam for 50 minutes over a slow fire. Add the remaining ingredients as directed above.
