Plain vegetable soup - Russian Soup Recipe

How to Cook & Prepare Plain vegetable soup:

Substitute vegetable stock for the meat stock in the above recipe.


Potato Soup
300 g meat 1 ½ litres water
800 g potatoes 2 tblsps butter
200 g vegetable roots salt, pepper, bay leaf
and onion minced dill or parsley

Prepare a meat stock. Pare and slice the vegetable roots and onion. Saute in butter or drippings. Add to boiling stock together with diced potatoes and sautéed vegetables. Add bay leaf; salt and pepper to taste. Cook for 25 to 30 minutes. Before serving sprinkle each plate with minced dill or parsely.
