Potato Soup with Fresh Mushrooms - Russian Soup Recipe

How to Cook & Prepare Potato Soup with Fresh Mushrooms:

500 g mushrooms salt, pepper, bay leaf
800 g potatoes sour cream
200 g vegetable roots minced green onions
and onion and dill
2 tblsps butter

Clean and wash edible boletus mushrooms or butter mushrooms (the latter should be peeled). Chop up the stems and sauté in butter. Separately sauté the sliced vegetable roots and onion. Slice the mushroom caps. Blanch, drain thoroughly, add water to cover. Cook for 40 minutes. Add diced potatoes, mushroom stems, vegetables, and a bay leaf. Salt and pepper to taste. Simmer for 20 to 25 minutes. Top each plate with a spoonful of sour cream and sprinkle with minced green onions and dill.
