Potato Soup with Mushroom Stock - Russian Soup Recipe

How to Cook & Prepare Potato Soup with Mushroom Stock:

Substitute mushroom stock (see p.36) for the meat stock in the above recipe. Put shredded mushrooms in each plate before serving.

Potato Soup with Fish
300 g fish Parsley or celery
1 kg potatoes 2 onions (100 g)
4 tblsps cereal 2 tblsps vegetable oil
(optional) 4 tbsps tomato puree
1 carrot (100 g) 5-6 peppercorns
2 bay leaves 1 ½ litters water

Dice the potatoes and add them to the boiling fish stock. Bring to the boil again and add the sautéed sliced onion, carrot, parsley root and tomato puree. Bring to the boil and add the pepper corns, bay leaves and salt to taste. Cook till the vegetables are tender. Remove the bay leaves and peppercorns. Serve with a piece of fish in each plate and sprinkle with herbs.

If desired cereal may be added.
