Potato Soup with Sturgeon Head - Russian Soup Recipe
How to Cook & Prepare Potato Soup with Sturgeon Head:
1 kg head of sturgeon 200 g vegetable roots
or similar fish and onion
800 g potatoes salt, pepper, bay leaf
2 tblsps butter Minced dill or parsley
Cook the fish head as directed in recipe for sauerkraut shchi with fish
head (see p.32) clean and slice the vegetable roots and onion, sauté
in butter. Pare and dice the potatoes and add to the strained and boiling
fish stock. Add the slightly browned vegetables and a bay leaf. Add salt
and pepper to taste. Cook forn 25 to 30 minutes. Sprinkle minced dill
or parsley in each plate.
