Sauerkraut shchi with head of fish - Russian Soup RecipeHow to Cook & Prepare Sauerkraut shchi with head of fish: 1 kg head of sturgeon 2 tblsps butter Chop up the fish head, remove the gills and wash. Scald with hot water for 1 or 2 minutes and then wash again. Add water to cover and simmer for 1 hour. Strain the stock, bone the head and return the flesh and cartilage to the stock. Cook for two hours. Add the sauerkraut prepared as directed in the recipe for sauerkraut shchi. Brown the roots, add the tomato puree and add to the stock. Thicken with flour, add salt, pepper and bay leaf.
