Sauerkraut shchi - Russian Soup Recipe

How to Cook & Prepare Sauerkraut shchi:

300 g meat 1 tblsp flour
800 g sauerkraut 2 tblsps butter
1 carrot 2 tblsps tomato puree
1 parsley root salt, pepper, bay leaf
1 onion

Prepare a meat stock (1 ½ litres). Put the sauerkraut in the soup kettle (if too sour, wash and drain). Add 1 to ½ cuspful of water and 1 tblsp butter. Cover and simmer for about an hour. Pour 1 litre of meat stock over the sauerkraut. Borwn the vegetable roots, then add the onion and together with the tomato pouree cook until tender. Add the bay leaf, pepper and salt. Stir in the flour thickening.

Was the meat. Boil gently in 1 ½ litres water together with the sauerkraut for 1 to 1 ½ hours. Add the carrot, parsley and onion which have been browned and the tomato puree. Cook for another 20 to 30 minutes. Add the bay leaf, pepper and salt. Thicken with browned flour.
