Summer shchi with potatoes - Russian Soup Recipe

How to Cook & Prepare Summer shchi with potatoes:

300 g meat 500 g potatoes
500 g early cabbage 200 g tomatoes
2 or 3 carrots salt
1 parsley root minced dill or parsley
1 or 2 onions

Prepare a meat stock 1 ½ litres water. Add scraped and sliced carrots and parsley, onion and cabbage, the cabbage runts cut into 4 to 6 chunks and whole potatoes. Boil for 15-20 minutes. Salt to taste. Add tomatoes cut in quarters. Bring to the boil. Serve immediately, putting a piece of cabbage runt, 2 or 3 potatoes and a piece of tomato into each plate and sprinkling with minced dill or parsley.
