Turkmenian Mutton Soup - Russian Soup Recipe

How to Cook & Prepare Turkmenian Mutton Soup:

(Shurpa)

500 g mutton 2 tblsps tomato puree
750 g potatoes 2 tblsps butter
2 onions salt
2 carrots pepper

Prepare a mutton stock. Slice the onions and sauté in the butter or drippings. Cut the meat into 25-to 30-g pieces, sear and mix with the browned onions. Add diced carrots and tomato puree; brown for another 5 to 6 minutes. Pour the stock over the meat and other ingredients and bring to the boil. Add chunks of potato. Salt and pepper to taste. Cook for 15 to 20 minutes.
