Casseroled Cabbage - Russian Vegetarian Recipe
How to Cook & Prepare Casseroled Cabbage:
1 kg cabbage 1 tblsp flour
2 onions 3 tblsps butter
2 tblsps tomato puree ½ cupful meat stock
1 tblsp vinegar (or water)
1 bay leaf salt, pepper
1 tblsp sugar
Clean, wash and shred the cabbage. Put it in a casserole, add 1 tblsp
butter and stock. Cover and simmer for 40 minutes. Then add browned onion,
tomato puree, vinegar and other seasoning. Simmer until tender (about
10 minutes). Stir in the flour which has been combined with the butter
and slightly browned and bring to a boil. Sauerkraut may be substituted
for fresh cabbage, in which case vinegar need not be added.
