Casseroled Potatoes with Fresh Mushrooms - Russian Vegetarian RecipeHow to Cook & Prepare Casseroled Potatoes with Fresh Mushrooms: 750 g potatoes ½ cupful sour cream Clean, wash and scald the mushrooms. Saute together with the sliced onion.
Slice and brown the potatoes. Put the mushrooms and potatoes in a casserole.
Pour in water to cover. Add salt, a bay leaf, pepper and parsley. Cover
the casserole and simmer for 25 to 30 minutes. Add the sour cream. Remove
the parsley and the bay leaf. Serve sprinkled with minced greens Casseroled Potatoes with Dried MushroomsSubstitute dried mushrooms in the above recipe. Dried
mushrooms must be cooked beforehand then cut into strips and fried with
onion. Part of the mushroom liquor may be used instead of water in the
casserole.
