Eggplant with Walnut Sauce(Georgian) - Russian Vegetarian Recipe

How to Cook & Prepare Eggplant with Walnut Sauce (Georgian):

8 small eggplants Garlic
1 cupful shelled walnuts Grape vinegar or
50 g butter pomegranate juice
2-3 sprigs of kindza salt to taste
chili pepper

Wash but do not peel the eggplants. Cut lengthwise into slices 1-1 ½ cm thick, sprinkle with salt and fry in butter one layer deep. Turn to brown on both sides. Crush the nutmeats or put them through the meat chopper together with the garlic and kindza. Add the salt, chili pepper and grape vinegar or pomegranate juice to taste. Combine thoroughly and then stir in 2 cupsful of chilled boiled water. Arrange the fried eggplant in a platter and pour over the walnut sauce.
