Fried Eggplant with Onion - Russian Vegetarian Recipe

How to Cook & Prepare Fried Eggplant with Onion:

2 eggplants 1 tblsp tomato puree
2 onions 3 tblsps butter
3 tblsps flour salt
½ cupful sour cream

Wash and slice the eggplant fine, sprinkle with salt and flour and fry in butter. Mince the onion and fry in butter. Top the eggplant with the fried onion. Pour the sour cream and tomato puree into the pan the eggplant has been fried in, mix and bring to sa boil. Serve with sauce poured over the eggplant.
