Pumpkins with Rice and Eggs - Russian Vegetarian RecipeHow to Cook & Prepare Pumpkins with Rice and Eggs: Cut 1 kg pumpkin into small pieces, add ½ cupful of water and cook until tender; stir in 1 litre milk and ½ cupful of rice. Cook for 30 minutes. Cool the pumpkin and rice, beat in 4 eggs, add 3-4 tablespoonsful of butter and stir in ½ cupful of sugar. Transfer to a buttered baking mould and brown in the oven.
