Rice and Mushroom Stuffing - Russian Vegetarian Recipe

How to Cook & Prepare Rice and Mushroom Stuffing:

1 cupful rice 500 g fresh mushrooms
2 onions or 50 g dried
3 tblsps butter mushrooms
salt, pepper

Boil the rice till tender then drain. Clean and wash the mushrooms; plunge them into boiling water for 5 minutes, then drain, rinse, chop up and sauté in butter. If dried mushrooms are used, cook them beforehand and then proceed as with fresh mushrooms. Mix together the rice and mushrooms. Add fried onion and season with salt and pepper.
