Squash Stuffed with Meat - Russian Vegetarian Recipe

How to Cook & Prepare Squash Stuffed with Meat:

200 g meat (boned) 2 tblsps tomato puree
2 squashes 1 tblsp flour
1/3 cupful rice or millet 1 tblsp butter
1 onion salt
2 tblsps sour cream minced dill

Prepare the forcemeat as for golubtsy (see p.97). Pare and cut the squash crosswise into 4 or 5 slices. Scoop out the seed and pack filling into the squash, rounding it on top. Combine and bring the tomato puree and butter to a boil. Add the sour cream and a cupful of water mixed flour. Salt the squash and pour the mixture over and bake in a medium hot oven for 30-40 minutes. Before serving sprinkle with dill.
